I’m wondering what they do with the bread shell that they take off the top of the chicken. 🐓 do they just throw that in the garbage or is it broken up and used as a bread garnish.

When I first came across this dish I thought that's something I must try to make.

After watching this I now realize that would be a fools errand.
Masively impressed with the thoughtfulness and precision, leaving no choice but to make the sojourn to Vonnas.
This must taste incredible.

People rave about my chicken preparations.
Hundreds if not thousands of birds I have cooked.
Yet I am humbled.
There's so much left to learn.

The pinnacle of poultry.

Looks amazing. As of April, the dish cost 360€ ($392 US), and serves 2-4 people. I wonder if the crust is repurposed somehow. Too salty to eat on its own, but there may be another way.

After watching this I am glad I am poor....Paying $1000 for a blant chicken which looks questionable is not for anybody. My $10 chicken looks more flavorful.

Personally, being from Nevada, I prefer Texas BBQ. It is just as tasty and the pit masters are just a passionate about their meat (chicken, pork or beef).

Let me get this straight. You spent all that time creating an elaborate crust in order to basically steam a chicken and you don't even eat the crust. Then you create a sauce that takes hours to make that would mask the finely steamed chicken, and this can all be yours for what $300 a person? I'm glad I am not super wealthy/

That's one overly complicated and expensive McNugget there Franco. One Michelin Star means good food and an inventive chef. The other two stars are just levels of pomposity and arrogance.
