ОтветитьLet me tell you something, the two cocktail videos got me into a deep dark rabbithole into the history and the art of mixology. It's just so fascinating how much lore a profession which at the surface seems so insignificant has and how much tie in it has with much of the historical events which we are taught in school, and how much it can tie in with how our society has shifted over the decades and continues to.

Simple syrup is TWO parts sugar to ONE part water. That is not rich simple syrup, that's normal simple syrup. If you want it less sweet, use less. Why is this the "real simple syrup"? Because it's shelf-stable at room temperature. It's too toxic to grow bacteria with that much sugar, just like how honey never goes bad and has antiseptic properties. All of his stuff is fine, just listen to me on this one. Never, ever, ever make simple syrup as a 1:1 ratio.
