So any conversions that happen after 7 days via Facebook won't be shown in the Facebook dashboard (we can see them only in the backend or analytics like GA). As you said the reason could be privacy which is applicable to Google as well.

Hopefully we can still track longer conversation paths through google analytics (via “channels”)
