I have a question that has been confusing me for an awful long time: I've heard many times that starch in grains turns to sugar between 65 en 75˚C, so why do you have to malt your grains first if it will turn to sugar anyway?

I did the same but with big amount 4 kg of barley , i let them sink in water for 1 day then i wash i smelled musty barley is it ok ?
