I will never buy Eurail pass again. Because:
1. You cannot select seats if you use their pass. System will randomly allocate seats. Four of us were allocated in different places.
2. If you buy pass from them the actual rail companies will deny to help you.
3. Their refund policy is not customer friendly. All most 100% sure, No Refund.
4. No phone no. to discuss your problems.
5. For any issue, their standard response " we are just intermediary, cannot help you. We have no control over rail companies". It's actually in their web page.
6. If you plan ahead you can get much better service form the rail companies directly almost at the same price.
7. Eurail pass eventually costs more or same because in most important routes you will have to pay for seat reservation additionally.

Are there staffed ticket windows in the Stuttgart and Munich airports, where one can get the Eurail Pass valdated prior to travel? Or....must one buy a machine ticket to the main train stations in town, and then have the pass validated?

This reminded me of my first EuRail Trip 49 years back in 1973 October (18 th. October 1973)!.
It was First Class Unlimited Travel Pass for 1 month and I had paid $ 150 ! (I was 23 Years old then)
And again I had travelled by EuRail back in 1994 October for 1 month.
I had paid $ 630 for unlimited travel in First Class ! (I was 46 Years old then & traveled with my wife)
I have preserved All my Color Photo Memories of both my EuRail Trips)
I have still preserved those passes !

My son and I are planning to travel to Paris, Rome, and Munich, is it advisable to buy the Global rail pass?

You should always ask for advice and it the person who answer do not trust then just stand in a que for to get to another person and ask. you can always ask the police they will tell you they do not know but will help you to get help.
