His commitment is amazing and to influence so many other young chefs, but to get to this level it looks like he has to sacrifice everything outside of work. Didn’t seem to talk about a wife/partner or kids. But if he is happy then that is all that counts. Also props to doing all that on prob less than 4 hours sleep a day 😅

Hal probably didnt want Paolo filming his morning routine because he probably doesnt get much sleep and having somebody there in the morning with a camera in your face would probably make your day long to shitty

Paolo there is no such thing as a Master anything. That is a business man that started out as a cook. He's been doing it for a long time. There is no mastery there just luck and skill.

Haven't finished, but it is the equivalent of Gordon Ramsey, so much nicer than Gordon Ramsey. I like this Chef; he is so down to earth and talk about patience!! 9 redo's for noodles is the only way to train them. P.S. I finished it.

But I disagree. Everyone has their own stomach and tastes personal. So Hal shouldn't do it for himself. The use of spices according to the customer is advisable

I could never sleep only like 4 hours I would be killed I need about 8 at least preferably 10 to last as long as he is he’s used to it but it certainly not healthy

Mannnnn I really wanted to see what his house looked like 😂 — shame Paolo didn’t start the day from his home like all the other videos but I can understand why he didn’t.

This video was more like Business Owner/Master Chef —- what a hard worker though, this video showed exactly why he’s so successful.

Also I loved that quote:

I do think cars, on most continents should be mostly luxury items. On Europe, North America, and Australia, they might be more common place, but a lot more trucks and buses most places. Cars are a luxury! Um... I can't wait to go to this restaurant and try the udon noodles! Ha ha!

I can certainly understand how putting your name on something every day, especially food and food service, makes you work your way through nine bowls of udon to get it right. I deeply admire and respect Mr. Yamashita's skills and work ethics but, seeing his busy schedule, I could not help but think of the culture of karoushi. Younger workers in particular seem to struggle with balancing their personal, professional, and private lives and all too often technology only seems to instigate the problem as opposed to alleviating it. Mr. Yamashita's personal involvement and oversight can only be a tremendous benefit to those who work for him.
