Feel like the "immortal" theory comes from because of the times he has died. Technically speaking, Ash could be dead after the very first death with Gengar and Haunter. Which would mean the rest of the show is all a sort of dream. Hence why Ask doesn't appear to age like anyone else and can't ever really die. Time is basically stopped for the boy and the show we see is all what he imagines or is seeing because the pokemon who hold his soul want him to see them like that

I was about to say “what about that time Ash was wiped from existence due to time paradox” but then I remembered him and his friends were only close to dying in that case. 😅
Considering literally all events we see Ash go through are while he is ten (and during one absurdly long summer apparently- makes you wonder if time actually works the same way for them as it does for us), Ash needs SOOO much therapy. His Pokémon surely help (especially his best buddy Pikachu), but actual therapy will definitely be needed one day. 🥲
