I understood everything except the # of networks part. I knew we always subtract 2 from the hosts but still don’t get why we subtract from networks.

Classes are now obsoleted, but it gives some understanding on how networks works.
But nowdays we uses netmask, which means that it doesn't have any practical reason to know about net classes, just for historical reasons.

However, I am a little confused about the "host per Network ID". So for the first example,

0XXXXXXX = 11111111.00000000.00000000.00000000

Why does the 0 make the first 8 bits all 1's? I don't get that part?
