Ответитьthere is a step called kalio before the dish turned into rendang. and for me as a person of west sumatera descent, that step is much more delicious than rendang. its a step where the dish still have the wet sauce. rendang is traditionally cooked for 7-8 hrs. and kalio is around 4hrs into the cooking.

Cook it again, but replace the ginger with galangal.
The flavour will explode.. more delicious, more bold and exotic.
With ginger, without galangal i say you only taste 70% of the rendang deliciousness.

Ответитьno matter anywhere is still rendang beef. whether is dry or gravy as long the taste is a must. Indonesia, Malaysia and Singapore, we had to be proud our Malay archipelago traditional food. nice to eat with lontong and beef rendang with some serunding.

ОтветитьAged rendang is always the better rendang! and doing it sous vide is actually equal cooking it for 24 hours, cook it longer until it equal 96 hours for the best experience (or less if you have meat with good marblings)

Ответитьmy late mom made rendang traditionally for 3 days, so yum nom nom & I do the same thing for my hubby (irish germany), mom said she does not wana insulting her mom lol (chinese malay indonesian married to javanese dutch). this coming christmas I wana make my dad in law rendang too, looking at your recipe make me wana do this instead lol my late mom recipe is definitely labor of love
