The video doe not show how to create the headings. It shows how to click the arrows once the headings are already created, which is obvious extremely easy to do, you don´t need help. Would have been helpful to show how to create the headings that can be minimized and maximized.

But I don't want these black triangles popping up in my Word 2016 doc. I never want to see them again! How do I get rid of them?

Great info. Now how the fuck do I turn this feature off? I fucking hate it.
I hate this feature in websites and I hate it even more when working on documents.
I would strip all my formatting from my document except that I need to retain my heading styles for other functions within my document (TOC, etc).
