I have no idea who these Dr.’s are, but here is a fact: oxalates have a strong biding affinity to calcium (Ca2+) due to basic chemistry. Calcium, as the nomenclature suggests, has 2 extra electrons in it’s outer layer, Oxalate (C2O42−), on the other hand, is missing 2 electrons in its outer layer. That’s why calcium has a 2+ in its chemical name and oxalate has 2-. The calcium gives oxalates its 2 extra electrons and the oxalate takes it readily in order to stabilize itself and in doing so they bind. So when these two molecules are close to each other anywhere in our bodies, not just the kidney, they bind to each other very strongly and form cristals. Because the kidneys filter out our blood and oxalates are primarily eliminated by the kidneys, this strong biding affinity (attraction) is most commonly observed there in the form of kidney stones, but this chemical attraction happens everywhere.
My credentials? I’m a nobody who went through chronic muscle pain and misterious rashes for 30+ yrs that ended within a couple of weeks after starting a low oxalate diet and started drinking 3 16oz glasses of fresh squeezed lime juice a day. I mean, I got to a point where my legs would ache like I ran a marathon and I couldn’t hold my toothbrush the day after mowing my lawn. And it all went away. It’s been almost 4 yrs. now, and sometimes I break my diet and eat my vegetables, I love me some collard greens, kale, beets and a good salad, but I eat them without drinking the lime juice days prior and after I get flare ups that are manageable and not as debilitating. So, do I care about the fact that there might not be enough studies to corroborate my experience? I’ll let you answer that. I can tell you that my experience made me leary of Dr.s who follow dogma, discount a patient’s experience and prescribe medications that don’t really deal with the problem, but merely mask it, like nsaids.

Before reading the Bulletproof book I was making kale and spinach smoothies and was getting terrible muscle cramps in my abdomen and hamstrings. I thought I was dehydrated and was drinking more water and adding electrolytes and no doctor could tell me why I was having cramps. I stopped making those green smoothies and the cramps went away. Then I read the Bulletproof book and put it together. So meta analysis studies don't always tell the whole story.

There’s so many studies that prove nothing. You can literally make the outcomes of a study say what you need or want it to say. I no longer trust them for that reason and also because there are so many fraudulent and paid studies. The amount of fake science is unreal. Experiment however tells you so much. I used to be a big juicer and loved to mix all kinds of concoctions, most of the time I’d mix a variety of fruits and veggies. One day I wanted to juice something and had nothing on hand but red beets. I juiced the beets, drank it and was almost immediately on the floor in pain, holding my stomach. I was in so much pain I couldn’t even Google what could possibly be going on with me, but my intuition told me it was the juiced beets. I looked it up later, and sure enough I confirmed that I wasn’t the only one that experience this pain. As I heard someone say once, if the study doesn’t agree with experimentation then something’s definitely wrong with that study. However my experimentation at least told me to stay away from juiced beets. It didn’t tell me why, like I have no idea if it was oxylates, but the pain was sharp and acute, that I know. I felt like that food was basically telling me not to eat it lol

The oxalates can be balanced by hydration- I rarely drank water adn did get kidney stones- there is a know connection, as you know doc. But water esp with some lemon helps them no form and I do think some folks are more sensitive.

I think regardless of what everyone says we should choose food based on our own bodies. If you are genetically susceptible to let’s say gouts then you must reduce purine coming from both specific vegetables, meat and egg. Please don’t start following Carnivore or vegan based on someone else’s experience. I have been suffering from IBS for years while chicken, egg and fish are fine red meat gives me terrible constipation, bloating and indigestion. If I must I either eat less or add some psyllium husk. Spinach are high in oxalates and should be consumed moderately. All I can say different food groups cause different issues in different people. So please do your own work to identify these foods that cause issues to you. However I’ll agree in order to feel good temporarily don’t start eating carnivore or vegan like extreme diets rather stick to Omnivore diet. Carnivore diet has no studies to do the backing other than few anecdotes. As Dr David Sinclair says too much protein coming from Carnivore diet will upregulate mTor enzyme ageing you faster. We want mTor to be suppressed and AMPK activated as much as possible. So balanced protein is must for healthy ageing. Plants provide polyphenols, phytonutrients that enable our cells to fight cancer and lower inflammation.

Oxalate dumping is a real thing when you go carnivore. The body lets go of oxalates when carbs lower to near zero. I gat histamine reactions to some plant foods if I reintroduce them & get extreme eye discharge. Of course they won’t do studies on this bc there’s no money in it. If there’s no pill to push or chemo to administer they won’t research.

Those are symptoms of hyperoxalosis, which can be caused by dietary oxalates or indogenously produced ones. Even in the ADA paper on vegetarian diets they talk about oxalates being an issue, especially for getting enough calcium. Its very worthwhile to review because it shows that some sources like almonds, might not be the best choice of food to get calcium.

That crap almost killed me after eating high oxalate foods for few years. I still support veganism though, just eat lower oxalate foods, and I'd agree that carnivore is bad ideea due to the uric acid and purines from meats.
Definitely stay hydrated, and have a good amount of calcium intake.
