Great learnings for me. Wondering, how long it takes to carbonate the ginger beer. I'd love to try that out. When do you transfer it into the fridge?

ОтветитьFrozen (healthier) waffles are the best. Keep them in the freezer, pop them into the toaster and they will be better than fresh. Done in 2min and will keep you from the more sugary stuff

ОтветитьOK so, what I take from this - you can make lot of things at home and it will be probably better and healthier, but it will take effort and you might not save money. That to me sounds like a hobby! Which is fine, but probably not for your average Joe. THAT being said, I will be making the mustard! Thanks for the video :)

ОтветитьThanks for the great thoughts. Here in the Midwest spinach is a real bitch to grow. Doesn't germinate. Doesn't germinate. Too hot! We get about a week of spinach for all our work. Chijimisai and Komatsuna are incredible and more worthwhile here.

ОтветитьGranola with pumpkin seeds is amazing. Easy to add some finely chopped dried pear or apricot for some sweetness. Ground cinnamon also adds sweetness without adding carbohydrates.
ОтветитьThere’s nothing like a fresh sourdough waffle. I grew up on these tangy, flavorful waffles. Downside: plain/“buttermilk” waffles suck.

ОтветитьWe are at the unlimited eggs point and I will never ever go back to store eggs. We get enough eggs that we sell our extra to our neighbors and it completely pays for the food costs for the chickens themselves.

ОтветитьWe go to Costco pretty often and get their $5 rotisserie chickens and eat off them for lunches/dinners throughout the week. Once we're done with it, I just toss the remainder in my instant pot with some roasted veggies, garlic, and whatever herbs I have that are on the way out. A few hours later I've got amazing chicken stock. It's probably the best $5 we spend each week.

ОтветитьJust FYI, your ginger beer also has 55g of sugar, which granted isn't HFCS, but still the same amount of sugar as a coke, especially a Mexican coke or any cane sugar soda.
ОтветитьInstead if ginger beer I make water kefir! It's pretty much the same process as milk kefir but with sugar water or fruit juice instead. It goes great in cocktails or just as a soda alternative. It seems like there's no storebought product that is a sweetness level between absurdly sweet and sparkling water, so making it at home at just the right sweetness level feels great.
Same with granola! So much better homemade. Also greek yogurt/sour cream, kimchi, sauerkraut, chicken stock, and jam

ОтветитьMy number 1 that I NEVER buy anymore is peanut butter. I buy roasted peanuts and blend them with salt, then add chia and flax. I started getting powdered peanut butter to lower my calorie intake but mix it with my homemade stuff. I find it so sweet compared to mine and I need to cut it down by adding mine lol.

ОтветитьYour ice cream looked awfully dry and icy. Not enough fat? Or is that ice cream maker really not the best? You totally lost me with "alcohol." It's entirely a matter of taste, but even the best beer doesn't match a good bottle of Riesling. Sake and Mead are both ok, occasionally even "really good!" But they are both to niche for me... good for particular occasions but nothing that I want to pop open on a random afternoon.

ОтветитьI made miso, but before the video. Homemade Koji, chickpeas for the beans, about a ten gallon batch. Made about ten years ago, about three gallons left.
Also brew beer, about 80 gallons a year. Brewing a great Belgiain style costs about the same as milk.
You should try making your own Greek yoghurt. I make mine using Chef Step’s sous vide recipe and a 1.00 individual serving cup of store bought yoghurt as the starter. I’ve seen recipes showing people making their starter at home. I imagine you could buy some dehydrated starter powder too, maybe. You may want to look into this and test the best way to do the whole process from
A to Z and make a video about it. Sometimes, I’ll mix in some heavy cream after the yoghurt is strained to remove excess liquid. I make homemade tatziki sauce with it or eat it with honey and granola. Good stuff!!!
