ОтветитьStrongly disagree with using garbage ice cream. You've got to use home made, and then fold in whipped cream to give it the softer texture.

ОтветитьThe thing is, back in the day my hubby worked for Schwan's (one of the original home food delivery companies). It was summer so he would bring home some of their freshly made, straight from the industrial deep freezer ice cream products. Up until then I didn't know that ice cream sandwiches start out crispy but as they go through various temperature changes during transport from factory to home freezer, they soften. Making the crispy cookie discovery ruined ice cream sandwiches for me. (They're damn good!) Lately I've been searching for a recipe. Yeah the soft ones get nostalgia points, but the crispy ones were phenomenal. I just can't go back! 🤤

ОтветитьOne of these days I'll remember to take the butter out for it to soften ahead of time. Instead always decide to make something and start within a short time. Therefore results in me softening the butter in the microwave, going a little too far and melting some of it. Funnily enough, everything still seems to turn out good enough for my standards 😆

ОтветитьI have been searching for an ice cream sandwich "cookie" recipe for 2 years that I could use to make these for my little home-based ice cream business.
Every recipe that I've tried has turned out hard, dry, bland, etc. I bet I've tried over 18 recipes. All disasters!!!
Until NOW!! I've added a tbsp. of coconut oil to the batter to ensure a very moist "cookie". It's a huge success! Moist, chocolatey goodness.
Thanks Chef John! And he's right. Premium pure vanilla is a MUST for this recipe! Don't skimp on the vanilla. Also, find a good cocoa. Forget the cheap garbage that is sold in many grocery stores and search for one of good quality.
