ОтветитьMost Keto icecream is going to be icy if it’s not made with all heavy whipping cream. The problem for me using all cream is that it leaves this very unpleasant film of fat in the roof of my mouth. I’ve tried all cream and half and half, half almond or coconut milk/cream with heavy whipping cream and after freezing it’s icy and the texture is more like a sorbet. I have yet to find the perfect Keto icecream but after trying so many I’m starting to believe there isn’t one

ОтветитьIt is so incredibly frustrating how hard it is to find a recipe that does not include erythritol - as this one does (Lakanto's "Monk Fruit Sweetener" is bulked with it). There is only one brand that I know of that offers any flavors which are solely sweetened with allulose and it's not available in stores; you can only buy it online and it is prohibitively expensive. I guess my search continues. Disappointed.

ОтветитьYou should really leave in the vanilla extract,regardless of what flavor you're making,as it helps to prevent ice crystallization.

Ответитьif you add MCT oil or vegetable glycerin about 1/4 tablespoon it won't freeze rock solid. Also you can add vodka - alcohol prevents freezing.

ОтветитьTom ur a sexy babe. I like the fact that you added coconut milk to cut the heavy cream. Way to many keto people are using so much heavy cream and its not good for you. Also xylitol is better to use when freezing liquids. Keeps it from getting icy.

ОтветитьLakanto is literally a 1:1 sweetness with sugar... you mean its sweeter than most regular keto sweeteners because of the added monkfruit
ОтветитьSo glad I found your recipe. I tried it and it was easy and delicious! I did some experimenting and made 3 flavors using add-ins. The flavors I created were: MAPLE PECAN (substituted maple extract and added 1 oz pecans), PEANUT BUTTER (added 1 tbsp organic crunchy PB), and CHOCOLATE COCONUT FUDGE (substituted coconut extract & coconut almond milk for extract & milk and then added 1 tbsp cocoa powder and 1 mini keto fudge bite<1net carb- that I get at trader joe's> crumbled in) Note: I also added a bit more sugar subst, to the last one, as cocoa powder can be a bit bitter). ALL 3 EXPERIMENTS WERE VERY DELICIOUS!
ОтветитьJust use 1 cup of heavy whipping cream, 24g of confectioner Swerve, 1 TSP of vanilla extract, and 1/2 scoop of vanilla protein powder. Put in mason jar, shake vigorously, then put in freezer for 3-4 hours. You won't have the iciness problem.
ОтветитьUse half scope of fav protein powder ... works great....microwave 30 seconds and its ready to eat from freezer. I never but keto ice creme in store anymore, ever. I always make our own with similar recipe.

So for richness, add grassfed duck yolks for additional health and a material that can be whipped for lift, as excellent ice cream often starts out hard as a rock! Lol..
Certainly going to add unsweetened coconut creme to the party now, awesome healthy!

ОтветитьOf note. you could add a little bit of alochol (such as lemoncello) and it would improve the texture considerably. Because of the difference in how it would freeze it would force the ice crystals to be smaller.
as would an icecream maker. or one of those shake ball ice cream makers. (bsaically if its moving while it freezes its got a finer texture due to smaller ice crystals).
I cannot find rebel and their website are liars. Screw em.
