I understand they can tokenize a stock price or the insurance etc. But how can an oracle let the smart contract know if your house burned down? You would still need someone (human) to actually assess this situation and then put in the data... no?

An oracle kinda lessens the blockchains "trustless" nature by requiring you to trust a third party. Therefore, oracles and smart contracts do not recreate insurance in a trustless way.
