I've never known that stainless steel pans can be seasoned... I thought it was only for cast iron.

ОтветитьDo you have to season your pan after each use and wash? Seasoning a stainless steel pan is a long process. Sometimes, I just want to fry up an egg and eat it.

ОтветитьYou only season cast iron and carbon steel because the metal is porous. Stainless steel is a nonporous metal. Stainless steel cannot be seasoned, instead you use the Leidenfrost effect to determine when to add your fats. Each pan has its advantages and disadvantages. The advantage of cast iron is that it is super heavy and as a result it does everything in slow motion. Its great as an oven, or in an oven, on a fire, and it heats super evenly on induction. It keeps food warm for longer too, which is why fajitas are served on a cast iron griddle. Cast iron is great for searing steaks. Carbon steel is ultra lightweight, and often bowl shaped. The hot spot is on the bottom in the middle and on the sides you have the warming zone and then a steam zone higher in the middle of the pan. It is great for stir fry. Carbon steel and cast iron can be nonstick when properly seasoned. Cast iron though is easier to season than carbon steel . Stainless steel is also ultra lightweight, the advantage is that it is nonporous so it wont react with acidic food and also that stuff sticks to it, allowing for fond and pan sauces. Stainless is where one ideally cooks their stocks, but hearty broths and stews are best cooked in cast iron. For reference a 12" skillet may weigh 6-8.5 lbs for cast iron, for carbon steel it'll weigh 4.5 lbs and for stainless steel it may weigh 3.5 lbs.

ОтветитьYou didn't season anything. you merely coated it with oil and preheated it, which is exactly how you use those. if you actually created a non stick coating with that coconut oil, it would have turned black. The reason why cast iron is black is because the oils that you cook on the metal polymerizes.
Ответитьhow long does this coating hold ? and what about after washing it after cooking something messy does the dish detergent get stack in the oil or does it wash it out and non stick coating is gone right away?
