Pressure cooked tenderloin, cured side meat used to enrich other dishes, vegetables…So many memories…after a hard year of labor, the tobacco would sell, pay off some bills, afford some crates of fruit, roll of bologna block of cheese, fresh pork chops and seasoned sausage, red black pepper and sage garlic… the warmth of the holidays made so special by the reward of fresh meat and the blessings of families that labored together and shared. A deeply embedded rich culture of the mountains. I long for those days, the bonds born of sweat, dust, hot Sun. God walked with us and rewarded us with so many simple blessings. The reverence with which he cut the tuna was so familiar, gratefulness revieled in patient ritual.
