I wouldn't call it meat loaf, call it pork tenderloin roll. Advice cook the bacon first not all the way through before wrapping the tenderloin so it will be cooked all the way through after baking the tenderloin.

ОтветитьI prefer to rap the bacon on the outside of the whole tender loin and then smoke it @250f until the thickest part is 140f. Let rest for 20-30 minutes. The bacon is cooked and the tender loin is juicy. Very tasty.

ОтветитьFor me, I'd tie pork with cotton twine in stead of using skewers. This allows searing on all surfaces. Looks very good!
