Can I substitute it for anything?

I live in Turkey and I didn't have most of the ingredients. I just used soy sauce, teriyaki sauce, garlic and apple vinegar. I used different types of noodles also. Turned out great! I used cucumber and carrot as toppings but let the carrots sit in the hot oil for a while to soften a bit. Loved it, thanks for the recipe!
