And since the pandemic has dragged, I decided to learn how to cook something that I could be proud of (no heated up Campbell's Cream of Mushroom Soup can count.) But Sohla makes everything so clear. I hope she becomes an educator because she's the perfect teacher. Thank you, Sohla!!!!!

ОтветитьI made the aromatic base with celery and I think that was my downfall. I cooked it down until it was a paste but it still turned out verrrry bitter. Has anyone tried it with celery and had luck? I think next time I will try exactly as Sohla does, I just didn't have bell pepper on hand tonight and wanted to substitute something else.

ОтветитьI made this tonight with some modifications to the ingredients but followed the technique exactly. It was fantastic! I got the crunchy layer of rice at the bottom, and everything was perfectly seasoned. The key IMHO was to let the soffrito REALLY reduce and to taste and season the broth before putting the chicken back into the pot.
Had I not followed Sohla's instructions, I would have simmered/sauteed the soffrito for much less time. I tasted it throughout. At first, it was bitter, but it turned sweet when I cooked it all the way out. I also would have never thought to taste the broth before adding the chicken back into the pot. It was so bland! I thought that the broth would get enough seasoning from the chicken, but I was wrong.

Thanks for this. Sohla is a joy to watch. I have had this video saved since it first came out and I just used it for the first time in a VERY loose interpretation for my chicken and rice. After searing the chicken thighs, I de-glazed the pan with apple cider vinegar. Then sauteed sliced onions and garlic before adding some cubed sweet potato (yams) and let that sit for a minute. That's when I added my spices and oj for some sweet and bright moisture. The spices I added were salt, pepper, tumeric, paprika, smoked paprika, chinese five spice, and freshly ground corriander. I think that's it. I meant to put in fresh ginger, but I forgot. Oh well. Then I added wild rice to the pan and let that fry off a bit. Added the water, checked the taste, then added the chicken and kale in. The simmer sound test may or may not work with wild rice, I was way more watchful in case I needed more water, but the flavors are *chef's kiss*. Love the one pan technique!

ОтветитьPaella is a folk dish that common people make for big gatherings, and they do NOT use fancy equipment like special pans. There are no doubt thousands--if not millions--of family recipes. It does NOT have to be made in a restaurant. Just the opposite. Sohla has no right to claim that they can't make paella.
ОтветитьHi Sohla, such pleasure watching you cook. i'm struggling with a 1-pot meal for vegetarians. Love the final presentation of the rice and I would really love to do this but w/o the meat. What can i replace the chicken with please?

ОтветитьYears ago , I had a wonderful Brown & Wild Rice side dish that was served room temperature. At a buffet. It was vegetarian & I lived it! Mushrooms, onions, maybe garlic, but don’t know what other spices??
