I tried sourdough years ago and felt like I sucked. I’m restarting the journey starting with your sweet roll. I began my starter 8 days ago and plan to use it today! I love the idea of saving your discard because it always feels weird trashing it. How do you maintain the discard? Do you just stir it before use? Keep it at room temp? How long do you keep the discard around?

I don't know how to make a starter though! Lo!

Came here for the buns but decided I needed to try all of them!
And this is my feed back
The loaf: okay so I’m not big into super sweet bread, so I did half the sugar, but this was great even when it not having a lot of stretch and folds and it sat in my fridge for a couple days before baking.
The cookies: we have been enjoying them, not sure what I did wrong but mine raised up and not out 😂🤷🏼‍♀️ but I think that’s a fault in me not the recipe, but it made a lot! And we’re a small family so if you’re also a smaller family maybe halve the recipe.
The buns: these I prepared in the morning with plans for them for dinner that night, but i forgot we had plans to go out, so I sat it in the fridge over night, and was still fine when I shaped the next day, I loved making smaller ones for my toddlers and normal sized for me, will make again.
Flatbread: this was so good! And was a quick to do, I found it fun that when I was eating my wrap the thought it was dough on my counter and hour ago, but it also made to many for my small family, I stored them Ina bread bag and by the 3rd day they were really dry. So use up asap.

I wish you would include the oven temps and time to cook … I am always looking back through your videos trying to find this info.

I’ve watched this so many times! I’ve been making sourdough for a year, and I’m finally changing it up and trying your sweet loaf! The real question is… where is that rising cooling rack from!?! Lol

I attempted to make the sweet loaf but my dough was so sticky and wouldn’t rise. Anyone know what I did wrong and how I can fix it?
