Overall pretty good video, but a couple of things I've noticed. When you guys made the hollandaise sauce, you may have has the heat on a big too high, as the eggs did end up becoming scrambled. Hollandaise is supposed to be a a fairly smooth sauce, as it is an emulsion, essentially!

Also with the shrimp scampi dish, I noticed that you guys were using precooked shrimp when you were making the dish instead of getting raw shrimp. I think if you guys were to try and make this again, use raw shrimp to cook next time, as you will get a more tender bite, and you're able to have more of that shrimp flavor infused with the sauce. It'll just be a much more flavorful dish that way!

The hollandaise looked like scrambled eggs😭

Your pan looked pretty clean when you were making the sauce after cooking the shrimp! Did you throw out the oil and fond leftover from cooking the shrimp? Perhaps that could be the reason why your sauce was white while it should be brown like in the cookbook, and its lack of flavour.
