Not to be negative or anything but people say the German doner kebab, which is created and usually made by Turkish people so are we Turks who live in Germany, Germans? But a lot of em don't see us that way but they would love to say German Doner tho it makes no sense to me.

The origins are in Bursa, Turkey. However you guys should try it wrapped inside tortilla, or thin flatbread. It also tastes awesome.

ОтветитьHere in England, the supermarkets sell a frozen doner kebab for £1. It is absolutely vile and should not be allowed to even be called food. Proper doner kebabs are a thing of wonder that I thank the Turks for.
Edit: When I say frozen, I mean everything is shoved inside a pita bread with brown lettuce, half a slice of tomato and one singular shred of red cabbage lol.

ОтветитьHave to say I really didn't like Doner kebabs in Germany compared to Donner (we pronounce it Dawn-er) kebabs in Scotland (which are for me much better than Donner kebabs in England). Liked the ones I tried in Turkiye, though they were different also, but I guess it's simply down to what you grow up eating. One thing is for sure, really happy the Turks have brought this, in its many forms, to countries across Europe and the World!!

ОтветитьThere's a German Doner Kebab store not too far from me, it's great. (Un the UK there's a food chain called German Doner kebab that sells this exact food) It's a bit expensive but well worth it.

ОтветитьI think perhaps a shortcut/lazy hack would be to go to an Asian grocery store and pick up a pack of frozen thinly sliced meat that’s used for Korean bbq (brisket, etc), then season it as you would the döner meat. It comes super thinly sliced and the best part of it normally is when it gets super browned
ОтветитьGerman here with a PSA: most Döner are absolute trash. They use the worst "meat" you can find anywhere with substantial amounts of bones and hooves ground up in it. The one thing you want to look out for are distinct layers in the meat mass. If you can see them, you know it is real meat, if it is just a Döner made from ground meat, stay away from it.

ОтветитьNone of the bakeries in Türkiye make a starter (poolish ) like this.. They just add flour (bread) and water (%75 hydration)and use fresh yeast.. Your dough was very slacky nearly 83% hydration plus the olive oil.. You don't use milk or olive oil.. It needed more kneading.. They knead the pide dough for almost 45 minutes in bakeries..Rested for an our, then shaped.. They place one egg yolk on top of each pide and make the indentations deeper . It should have bubbles like a focaccia.. Some put a flour slurry ( sometimes grape molasses for a darker finish) on top instead of expensive egg yolk version .🥰

ОтветитьThe mayo sauce version is my least favourite. If you are not into it (like me) try joghurt or even better greek joghurt. I think the mayo once was added to make it last longer but it isnt so great for the taste
