When you buy a brisket look at the long edge of the flat that's not covered to read the marbling like a steak

Great video gents! I’m going to walk back a few things I typically do on my next brisket to see if simple is better. I have typically injected and used a water pan - those are out on the next one.

Texan here. I like the cook and commentary, buts let’s get real, y’all aren’t Texan, and Hickory stops at pork. We keep it simple. Manage the fire 99% of the time and this is most important part. You smoke a brisket right and flavored rubs are irrelevant and taste like shit compared to salt and pepper.

I put my brisket in the freezer for 25 minutes before I trim. Makes trimming fat easier and safer.

How important is the spritzing ? Doing a brisket this weekend and was planning to start around 9pm and go overnight to make sure it’s ready by 6 the next day (16lbs brisket/16hour cook time/5hour rest) but was curious if that means I need to stay up all night spritzing. Is it possible to maybe start at 8 and do spritzing until 12 and I could maybe slip away for sleep sleep then until 5 and finish up when I wake.

That last layer looks a lot more like Malcom’s Steak Rub rather than his TX Brisket Rub. The Steak Rub has a lot more super course stuff in it.
