How to Save Illustrator EPS File

Thank you! I noticed there are options for resolution (For Complex Art, Low, Medium, High, and Custom) that are not greyed out when I go to save on the latest 2024 Illustrator.

I'm curious if an EPS file is vector art and scalable without loss of resolution, what do these different resolution options do? And is this choice important when saving files?
