Adding acid to food can keep it from browning easily. And the opposite is true about adding an alkaline. Thats why some recipes for roasted potaoes have you boil them in baking soda water first

Don't brine your red meat in pickle juice, but do brine your chicken with it or with a vinegar-lemon juice-water-salt mix. Kills the nasty bacteria.
