The faster growth rate of the red oak in this example helped exaggerate the difference between the vessel structures of the two woods. But it is still a scientifically important experiment in that it demonstrates the quality of the White Oak closed vessel compared to Red Oak.

I just look for the presence of tyloses. White oak has them.

Could a person just soak their wood construction pieces in penetrating epoxy or even just boiled linseed oil in order to seal those capillaries, prior to construction?

Nice presentation but I need to comment on how you use the word porosity. Porosity is a static property of a material. It can be closed cell or open cell. If it’s closed cell the water or alcohol will not move (or hardly at all). The word you need to use instead of porosity is permeability. That’s the dynamic property of the material. Two samples of wood can have the same porosity but very, very different permeability depending on whether the cells are connected or not. The red oak you showed is porous AND permeable. The white oak can have exactly the same pore volume but be mostly not permeable.
It sounds trifling but words have meaning and porosity is commonly misused the way you used it in your nice demonstration. Try distinguishing between the two words and you’ll find it’s better descriptive of what’s going on. In other words don’t say porous when you mean permeable.
Thanks for reading my comment.

Great demonstration. Years ago, I showed a supplier that I could blow bubbles through a piece of supposed "white" oak and that charactistic was a problem. He was relying on color, which is not reliable. Also, I've been told that there are numerous oak crosses or hybrids that can have characteristics of either parent species. Ex/chestnut oak.

LOU, wouldn’t the capillary action on red oak make it better for absorbing various epoxies and glues and thus make for a better wood/fiberglass boat (so long as wood is completely covered) even though a terrible wood only boat?

Fantastic presentation. I wonder where the DC current comes from?
Is this the current that dissociates the Sodium and Chlorine from the salt? Or is this current generated when the NaCl dissociates into its ion form?
We can see how the Sodium hydroxide (NaOH) and Hydrochloric acid (HCl) can form but when mixed together they neutralise and form Salt (NaCl) and Water (H2O).
Is there a process occurring inside or on the surface of the oak wood? It’s either that or an external current is present that drives the chemical reaction in one direction.

It would be interesting to soak red oak with wood hardener. If it could totally wick into the wood, you could end up with hybrid product that is impervious to water, and stronger than the original board.
