I want to use a quilt to make a vest and bag out of it. Do you think its still possible to use this pattern??

I’ve never quilted before and have a possibly weird question. When I watch you sewing the lines of quilting, it appears that you carry the thread from one row of stitches to the next and do not cut or backstitch on each row? I know some machines you can cut from the machine vs scissors so I thought I would check… I hope that makes sense 🙃😆 Thanks!!
