I make this too from time to time (with the noodles seperate) it's a great treat. *Only significant thing, is I'd have doubled the number of clams at least because - I dunno, I love them lol.

ОтветитьDid anyone make this dish like 4 dozen clams, scrub them up ...get them in a pot to steam with garlic oil wine ...& I never knew their were clams that were loaded with black sand !! what a disaster ! quickly ran the sause through cheese cloth several times , how can I know this will never happen again ?
ОтветитьWrong, wrong, wrong! Open the clams (a lot of clams) by hand and dice, save the juice. Saute several cloves go garlic in very little olive oil. Simmer the juice to a froth. Then add back the clams and simmer to a froth again. Toss in a generous portion of curly parsley right before combining with "undercooked linguini". Let stand for 10 min. Restaurants don't make it this way because it is too labor-intensive. The reason for a small amount of oil is so the sauce absorbs into the pasta. You also want larger clams than little necks. I easily use 50-75 per batch. And yes, weak people who can not open clams need to pass on this one. But for the rest of you, this simple recipe will be the best you have ever had.
