How to Select Text in a PDF in Foxit PhantomPDF

I guess they changed how hilighting works. I haven't been able to get it to hilight. I select "select text and image". I try to select something and nothing happens.

I do not have Foxit, but I am trying to help someone that uses it. Can you provide me with step-by-step instructions on how to select all text from a document with mulitple pages? We would like to select all text from all 50 pages. Thank you in advance.
