ОтветитьThat looked a little like 4 tablespoons of chili powder. I would have added more cumin. And you're kind of funny with the "if you don't like cinnamon for whatever reason..." and "if you want to do a veggie version for whatever reason..." Whatever reason is that the person you were speaking to hate's cinnamon and meat. That doesn't fly with me. Try nutmeg, too. That's a secret ingredient. It's that thing that you can't figure out what it is but it makes all the difference.
ОтветитьMy husband is Mexican American and he loves enchiladas! I agree it's the corn tortillas bit. I know it's more authentic and my husband only likes those but when it comes to baking them in the dish I like the flour tortillas too. Making this for dinner now 👩🍳

ОтветитьI made this today for the first time and enjoyed it, but here are some suggestions. If you like spicy food you can substitute a hot sauce containing vinegar, like Valentina's, for the apple cider vinegar. You do need quite a bit of acid, because like the chef said the sauce lands a little flat. Great comfort meal but still comes out light with the chicken breast.

I just made this tonight for my family. I did add some canned green chilis and a can of drained black beans to my chicken filling. I garnished them with tomatoes and lettuce. They were a hit! I'm stuffed now! Thank you for giving me another recipe to add to my collection.
ОтветитьI've had enchildas made in restaurants and homemade by Mexican people in California. They're very good, but the best ones I've ever had were made by an Italian woman from Italy. They're not just good; they're delicious beyond belief. After she served her enchiladas to guests, she would always get requests for the recipe and would be asked insistently about how she made them.
