these are mostly low end cards until like #4 and 5, my 6800 is struggling a bit on unity 3d in 4k at least with ray tracing and reflections, i may just aim for a 4080 or 4090ti

Total garbage. No mention of the A4000 (Nvidia) or other workstation GPUs which vastly outperform gamer GPUs in content creation, 3d rendering, etc.

Question! I work heavily in Unreal Engine 5. So strictly speaking GPU and UE5, would you recommend the AMD 6800 16GB GDDR6? I currently have a 2016 RX480 8GB GDDR5. I hit about 97% GPU usage in UE5 at 7.6GB/8.0GB used in heavy scenes and it lags like crazy. Any help would be appreciated!

Good video but is important to notice that it depends of the games you wanna make.
If you're making casual games, like phone games or games that doesn't need a lot of visual fidelity, the lower I can personally recommend is the GTX 1060 or an RX 580. Now if you're making games more complex, RTX 2060 or an 5700xt and above should do the trick, the more VRAM the better. Large studios buy professional cards or High end cards like the 3090 or the 6900xt, because of the amount of cores and VRAM.

Note:
Keep in mind that the NVIDIA cards perform better than the AMD cards in professional applications. Hopefully AMD will become more competitive in later generations
