1 Knorr Pork Cube
3/4 cup peanut butter
2 bunches baby bok choy or pechay
12 pieces snake beans (sitaw), cut into 2 inch pieces
2 medium eggplant, sliced
1/4 cup achiote (atsuete) seeds
5 cloves garlic, crushed
1 medium onion, minced
3 quarts water
3 tablespoons cooking oil
1 1/2 tablespoons cornstarch
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1/2 cup bagoong alamang (cooked)
Steps:
1. before cooking, mix annatto/ Atsuete seed and warm water in a bowl
2. soak for 10 mins. to extract the color of the atsuete
3. mix and then filter through a sieve and leave it in a bowl
4. Boil water in a cooking pot, and then put the pork hock to remove impurities
5. let it boil for 15-20 mins , you can flip the pork from time to time
6. The scums will start to float, set aside the pork in a bowl, throw water afterwards
(cover the pot to boil faster)
7. Using the same cooking pot, preheat oil. Once it's hot, put the onions,, saute for 20 secs.
8. and then add crushed garlic, saute until both onion and garlic are soft and light brown
9. Put the pata, saute for 2 mins., flip it from time to time.
10. add water slowly until it reaches the same height as the pata to tenderize it, cover it.
You need ample amount of water for it not to dry
11. Once it's boiling, adjust the fire to low med. heat.
12. cover and continue to cook for 60 to 90 mins. until the pata is tender
13. Add knorr cubes to the water, mix until it dilutes with the water
14. add peanut butter sauce , mix until it dilutes with the water
15. cover again in med. heat for 10 mins.
16. we can then put the colorants, atsuete water, mix, let it cook for 5 to 8 mix. until the sauce is reduced
17. add small bowl of mixed corn starch with 1/4 water into the pot to thicken the sauce , keep mixing until it thickens
18. let it cook for 5 mins. more
19. add pepper and salt, it will vary if you're going to use bagoong afterwards
20. add the veggies, eggplant, then sitaw, mix, and then cover for 5 mins.
21. and then add pechay, mix again and cover for 2 mins.
22. put into serving bowl, add bagoong to your preference.
* DONE *
Tips:
Use a pressure cooker when cooking the pata for 60-90 mins. to cook it faster
