In the book, it is explained that dwarfs evolved to exist and prosper in mines. Their digestive system processes the dirt they eat and extracts nutrients from the ground as well as from bugs that might be residing within. It also processes it quickly and explosively. Consume dirt, poop it out quickly. In fact, the pooped dirt also hardens quickly, so they don't just created unsupported tunnels wherever they dig. A flying piece of pooped dirt could threaten to take a person's head off, and a fart is devastating.
More interesting aspects, dwarfs' skin can absorb water from the environment, in case of a tunnel collapse. Mulch uses that in the books as part of his thieving techniques. He'd dehydrate himself before a heist, then the skin pores would be so thirsty that they'd act like suction cups. Besides that, their spit can harden and glow while acting as a sedative (he uses that on his burnt thumbs when blowing up a goblin in jail). The movie made his hair creepy. In the books, a dwarf's hair is like antennae picking up vibrations to help navigate through tunnels, and it hardens when pulled out. Mulch uses that to pick locks. He shoves a hair strand into a lock, plucks it out, and uses it as a key. Dwarfs are also lacking in magic, but those natural traits fill in the gaps, and they are very sensitive to light.
