I probably would substitute with grain fed butter, maybe I would use drumsticks or chicken breast. I heard this was the healthiest pieces of the chicken, and use brown rice.

I have made this a few times now! It is amazing! The only thing I do different is saute the mushrooms like I would put them on a steak. I add white wine, butter, worchestshire, Montreal seasoning, and some chicken broth. I also double the amount of mushrooms, only because it's our preference. So so yummy! I can't find the actual measurements for the ingredients tho. I would like to find those because then I could share the recipe. It would be hard to say exact measurements I do, only because I have just tossed stuff in. I don't know how much I'm actually putting in. I just know it tastes good!
