I have a single beveled deba. Use it for tonkatsu.
Then I havea double sided kiritsukie ( hope I spelled it right.) use it for my chicken cuts.
About to buy a gyuto
And a single bevel kiritsukie.

Hi,
Can I practically use a right-handed knife as a lefty? Or does the geometry of the right band blade make it impossible to use it for a lefty?

By high carbon do you mean blue paper steel or just anything that is above jsk steel as far as carbon content goes? Wonderful video - thank you for the advice! This stuff seemed to get more complicated the more I researched until I found your channel :).

I love you videos and your expertise. I would love if you would make a video and could go into detail why left handers need seperate knives and how it affects your cutting, when cutting with a single bevel knife with the wrong hand.
I know the basics, but I always learn something new when watching your videos.

For beginners, which single-bevel knife would you recommend? There are different types on the website. Is there a particular one you find slightly more versatile than the other? Can you also do a video on some basic tips on how to sharpen Japanese-style knives?

Very informative video Vincent. Would you consider doing a video showing the proper way to sharpen a single beveled knife? I have just added a Deba and a yanagi to my kitchen and am comfortable sharpening double beveled knives on my stones but fear I would mess the single beveled knives up if I attempted without further instruction. Thanks for your great videos and consideration!
