ОтветитьI'm also a ginger and also love to bake. Not so much the breads they have always been my enemy when making it. I'm more the cookies and cake sweet rolls, dinner rolls things of that nature. Not sure how you pop up under my suggestions but I'm always open for learning something new. Also very impressed with your age and ownership of a bakery so young.

ОтветитьI read somewhere that you don't need to add fruit skins to a sourdough starter. The yeast that has evolved to live on fruit skins will be swiftly outcompeted by yeast evolved to live on wheat hulls anyway, so what's the point?

ОтветитьIt’s probably too late to suggest a name for the sourdough starter, but if you need a new name sometime, I suggest Bob. It’s the name of the sourdough starter in the book A Wizard’s Guide to Defensive Baking by T. Kingfisher. If you haven’t read it, I highly recommend it.

ОтветитьNice I’m 30 and at 19 I started the most horrible journey across Washington State that would lead to homelessness, and then later to a little bit too much knowledge of baking/baked goods from around the World, some assassination attempts, so really you are very lucky to be running a bakery so young. It’s also slightly problematic on behalf of everyone that things turn out this way because it really makes for a bad time when politicians deal with foreign relations anyways. Instead of cinnamon cream you should try my banana jam recipe which is just overripe banana and frosted cupcakes mixed together, heated, and stirred. It’s a really good banana jam although I would use like previously frozen banana for this and yes the level of ripeness banana should still go in that that’s actually a good recipe I’m not gonna lie but you ought to maybe go for like a raw cacao too or something is maybe a little tough to bite but it’s so good.
