To be fair to be game something need to be said: The game went into Early Access in a very ruff state. The Developer, THQ Nordic then they hired a new developer studio. They took the risk to rework several content and also take new stuff in, based on the communities feedback. From there on the game became better.
That's the reason for the very mixed reactions. Most of the negative come back from the the time with the former developer.
Next thing to be said: What you do in your video can't be done anymore. IDK if it is because of your video, community feedback, our the developers themselfs became aware that there is an issue with the balancing.
Now you need a hire rank to even be able to pick pocket. Otherwise the only way is to knwock someone down to rob that person. That can fail and guards could catch you while doing. Because I asume that's illegal, regardless where you start.
So if you start the game now a days, such exploits would not be possible anymore! ;-)
