Pickled Eggs with Sausage & Onions (Two Easy Variations)

Can somebody help me understand WHY put in the "Refrigerator"?
I thought the purpose of "Pickling" was to make it "Shelf Stable".
I always saw just sitting out on the counter in the Bars.

Hot dogs are not sausage! Sausage has its own seasoning and don't need to be pickling!

Ive just done a batch of individual meal size jars in London, UK this morning.
I'm guessing I couid watercan these for a long shelf life?

Question I would like to try your recipe but do you have to use jars. Can you use a storage bowl with a tight lid?

what size are the jars? do they need to be refrigerated? how long are they good for? It looks so delicious!

I've got a question. Could you have used the water you boiled the sausage in instead of the plain water you mixed with the vinegar to add more flavor? Think it would help?
