ОтветитьMy family in south Brazil would keep the meat stored in buckets of pork lard in the basement. easily for 5 to 6 months throughout the winter. They didn't have fridges in the countryside in the 60's. Would you try that one?

ОтветитьI'd be careful of the wax you buy. Many sellers will peroxide the wax to make it lighter in color. Lighter colored wax yields a higher price.
ОтветитьThe problem is that when you dry age a steak-usually only up to 30-45 days it is dont as not individual steaks but a slab of meat. This is done in a controlled refrigeration environment. Then the dry rotten part is trimmed off and the internal part is kept.
In this case aging the small steak for a year the entire thing broke down by natural enzymatic action and basically you were eating rotten steak. You were eating the part that would have been trimmed off a regular dry aged steak. So yes that is not good.

ОтветитьAt least Guga proved that you can dry age in beezewax for way too long, and it is still edible. It's a way of more slowly dry aging and getting more flavor.

ОтветитьDip the steak in beeswax instead of pouring as there are small holes and gaps formed. Beeswax alone doesn't seem to possess the antibacterial properties of honey so maybe dip the steak in honey first and then dip it in beeswax to seal it completely. Also I don't think a frozen steak is the best for this as there will be lotsa water inside. Honey dehydrates bacteria so having water around will lower the effectivity of honey.
ОтветитьSide dish looks awesome. I eat turkish eggs with yogurt and dub chili oil for curry and oil mixture warmed up its soooooooo good and ill add some seak and some onion potato garlic type tortilla naam thing.
