ОтветитьThis just doesnt seem like enough liquid for a 2 and a half hour reduction! I would of thought that would of started burning in the pan after 40mins! Ill have to give this a try
Ответитьso far so good, but you do not put the wine in after the tomato paste, but first. the meat got to take the wine in. i prefer red wine, it makes the dish more intense and smoother. white wines are often coming with a certain sourness. in the original recipy, you add butter to the pancetta, not olive oil, but many use oil, i prefer it too.

ОтветитьWell, you didn’t see it, because f.e. In Tuscany it’s just called “ragu”. Bolognese, so I think, the name for the tourists. Ragu di carne. Search for this name and you’ll find. As an Italien: Well done! I‘ll prefer without milk, but that‘s just my taste 😉

ОтветитьFor some Reason I always used herbs aswell but every video I've watched has none. Did I slip through another Mandela effect window or has other people used herbs too cooking Bolognese sauce
Rosemary, garlic & thyme.. I'm lost as to why I always thought that herbs were definitely necessary.
What kind of dry white wine did you suggest?

ОтветитьThis is close to the Marcella Hazan bolognese. I use half beef half pork, roughly one pound of each. Hazans did not use pancetta, but wow, I'm thinking it's going to be delicious with it. Will definitely be making it with pancetta.

Ответить"Ragù alla Bolognese", this Is the authentic italian name of what Anglos call "Bolognese Sauce". In Italy it's used with tagliatelle/fettuccine (noodles) but never with Spaghetti! Spaghetti Bolognese Is an english thing.
(PS, Italians don't add tons of oregano in everthing. For exemple in Rome it's common to use sage, black pepper and Rosemary).
