ОтветитьThis is such a phenomenal recipe. I usually just use dried seaweed and grass fed been bones if I can’t get pork bones from the store and it turns out just the same, if not close enough. This is 100% my go to when it comes to homemade ramen.
ОтветитьNobody is making the shoyu tare like this, is It becouse of time?normaly you use kombu with soy souce over night, and the amount of mirim and Sake is way less.

ОтветитьOk. I have to comment. We have made this several times and it is to die for. The only thing we have done different (and you don’t have to, we just prefer it) is after the pork belly is cooked in the broth, we put it in the slow cooker overnight with some of the dashi and ginger slices. This is the best ramen I’ve ever had. It’s so much better homemade and even though it takes some time, it is well worth the effort. Thank you for this phenomenal recipe!

ОтветитьI don’t have the seaweed or mirin and sake, but I’m still trying it out with white wine vinegar as substitute for sake and mirin, I hope it’ll be yummy!

Oh I forgot to tell you that I made yourTonkutsu ramen's recipe last week n my kids ❤ ❤ ❤ it so so much. They've asked for more then I have to make it again by the next day. ОтветитьIsn't shoyu ramen broth supposed to be clear? Why do you need to put pork bone broth for every ramen broth? Isn't chicken stock enough? pork bone broth is so difficult to make
