For anyone strugglin', look close and see she took the hair you put through the flat iron and pulled it toward the rest of the hair wrapped around the iron. Very slow movement (and probably high heat) is essential. And she hold the hair just as the iron comes off and bounces it, which is similar to scrunching your hair for defined curls. Hope this helps!
Although I prefer heatless curls, I tried this (with some heat-protection spray) and the coils are beautiful. Did take about 5 minites of trial and error to get it right.
