The first grand sage is technically the real one, once we went to sleep that’s when the dream starts, so whatever he says when we first see him is what he really thinks. That’s probably where he figured she would make the best candidate to be the dream host.

What I assumed from the story is the Host was randomly changing each loop, and we were lucky it was Nilou at the end

The dream host changes every day, after each day the dream used on the populous is taken away and a different host is chosen to repeat the same dream. It was just a coincidence that nilou was the dream host when we finally escaped it.
