"One cup butter" is confusing, do you pack the butter into a cup to measure! why not give the weight in grams? butter packs are sold by weight after all.

Hi Anna I tried your pie dough with 45 ml olive oil and it seemed to be to much. I could not roll the dough out, it was too soft and it kept breaking. I had to throw it out. I think 45ml of oil is too much.

Just doesn't work !
3 tablespoons of rapeseed oil + 1 cup (1/2 lb) of unsalted butter almost made it into pastry without any water/vinegar.
I started adding the vinegar solution but before half (4 tablespoons) were added my mix was mush !
To salvage anything from it I had to add enough flour to hold it together.
Then it wouldn't roll without tearing. And wouldn't lift without sticking.
In the end to prevent loss of 3 big bramleys, juice of 1 lemon and 1 lime, cinnamon, nutmeg and copious sugar, I had to put one half of the "pastry" in a ball into the pie dish and mould it with my knuckles as best I could. Fruit and syrup mix added were into pie dish. Then roll the other half as best I could and, knowing it wouldn't lift without tearing into pieces, I just cut it into squares and made a patchwork top over the fruit. Some joints between the squares I press welded together, others were left for vents.
It cooked and I ate it.
But your recipe for flaky pie crust is a non-runner and I'm not surprised because no one else has done this by hand on any video that I've seen.
I'll just have to look into it for myself for all the use TV chefs are to us ordinary folks.

Worst crust ever💩😠 too wet and sticky! Had to press it in like a sugar cookie and it's just falling apart😣

You supposed to be a chef???? Your a fraud. You should use vegetable shortening and rub it in for savoury pies. For sweet pies you use a pate au Sucre. Both require the rubbing in method not arsing about with a gadget. Shame on you.

Thanks for the great dough recipe. We baked it today, the dough seemed very dry after resting in the frig overnight even though we followed your measurements closely. It took lots of sprinkles (maybe another 1/4 cup) to get it to roll out. The galette crust was very tasty and tender to the point you could not hold a slice without it crumbling. J. Pepin's galette crust stays stiff because I think the shortening ratio is different. Sincerely, JAH

I really expected this to fail because it was my first time making pie dough, but it actually worked out very well and wasnt even that difficult. If i ever want to make pie again i will deffinitely return to this video.

i've watched this a milion times. finally trying it. i'm sure after this, you tube could just delete all other pie crust videos and we would still be running at 110%. Thank you. By the way, my pie crust was everything I couldn't even imagine and I have never made anything that came close. I did an egg wash on it. It made it so nice. I also used a Mr's Anderson's aluminum pie crust shield. I made a turkey pot pie. Oh. I want to eat the whole thing but limited myself to 2 pieces. My skinny boyfriend ate a whole slice! He eats very little, so that was a miracle. He usually only eats what he cooks himself. You are a superhero! Also, mine was having trouble not falling apart when I tried to roll it so I put a flexible cutting mat over it then it rolled out more easily. I will always remember you in my prayers for helping me with my pie phobia. :D

Sorry, but I followed the directions to the letter and my dough turned super wet with the amount of water and vinegar. I'll try it again and add the water by the tablespoon.
