Regarding ex 1: The proper grammatical form is to backshift the tense - "Sarah said that she drank..." although if this is a current habit, you can say "Sarah said that she drinks..." However, in this particular instance, we only have the sentence without the context, so we don't know when the sentence was spoken. What if Sarah said it two months ago and then gave up coffee? Her original words would still be "I drink black coffee every morning." But, we would only be correct in reporting, "Sarah said (two months ago) that she drank black coffee every morning." Remember that if you are unsure, just backshift the tense.
The exception is if the sentence contains a reference to a future time that has still not arrived. Ex: My friend Raj told me this morning, "I'm getting married next month." If I had to report this to another friend today, I would say, Raj told me this morning that he's getting married next month. Notice that this morning and next month stay the same because I'm reporting the sentence on the same day in the same month.

Sir may be I am wrong but one practice sentence in direct speech "Didn't Nicole tell you we were coming today?" He asked.
In my opinion it should be changed like....
He asked if Nicole had not told us that they had been coming that day.

In this sentence the word 'every' suggests habitual action so, when talking about habitual actions we don't change the tense form... This is what I read.
