1 3/4c heavy cream
1/4c sugar
3 egg whites
DO NOT WHISK TO FOLD IN. USE A RUBBER/SILICONE SPATULA.
Be careful to not over hear your chocolate.

ОтветитьDon’t use a whisk. You’ll loose all your volume, use a spatula and take the folding instruction literally. Scoop and FOLD it into the mixture. Egg whites / meringue is verrryyy finicky

ОтветитьI absolutely loved this chocolate mousse! Always my go to recipe🥰 I do agree with others saying to FOLD with a spatula or big spoon to create more air into the mixture (I folded mine with a spatula) and the mousse is so light, airy, rich it’s definitely a recipe to try🫶🏽💕

ОтветитьOne Important Factor: To FOLD, you must use a spatula/scraper, and gently toss (look up a video on folding). The goal is to mess with it as little as possible, as every tine you stir, you are breaking up the aeration that gives mousse its fluffy, airy texture. If you just stir it with a whisk, you will have a seriously flattened, heavy texture.
ОтветитьPlease also include weight in grams of each ingredient. One cup of chocolate chunks doesn't help someone whose chocolate starts out as chips or blocks.

ОтветитьLooks good don't know why everybody making chocolate whip cream where is the egg yolks? That's what gives the richness I don't know if it's a moose without egg yolks. I think it's more of a whip cream
