I just made this, followed the recipe exactly. It's jiggly and the half of it is fluffy. The bottom of the cake turned out like an omelet, with no fluffy texture at all. I also added 2 vanillas because i thought that the cake will smell like an egg. I was completely right. The whole cake tastes like an egg. As a result i can't eat that. I think that the yolks wanted more whipping and the whole recipe many vanillas, but I'm not willing to try this again. Total impression: 3/10😢

ОтветитьI made this off the online recipe and it came out super tall and cracked and it's super eggy I think instead of using measurements of how many eggs they need to put the grams of the amount of egg whites. IV now seen other recipes that have used wayyy less eggs to the batter and it was equal parts yoke and whites... I was a bit disappointed as this took quite a lot of ingredients.

ОтветитьThe real source of failure for most people is the folding process. Under mixing means the layers of cake separate during the baking process, making it look like water got into the cake pan and created a cheese like cake bottom. Adam Ragusea’s has a video on how folding eggs white is BS. Don’t fold the egg whites in unless you’re a professional pastry chef with decades of experience. Just blast the batter and egg whites together with your mixer!
