Ответитьi haven't made latkes since i was 12 so about 8 years ago when i had a homemade fried food phase. last time i made these i used some as hamburger buns (10/10 great combo btw) so yes, they are a very versatile food that goes great with anything. i'm not jewish but latkes are easily one of my favorite snacks to make
Ответитьiraqi jew reporting in to give the 'fourth way' latke: the iraqi latke made with mashed potato: aruq. You bake the potatoes (so the mixture isn't too wet) mash it, and then add the rest of the latke ingredients (grated onion, egg, spices to taste, and parsley [not optional]). Its awesome. We eat it on pita, by itself, with amba (mango sauce) or tahin.

ОтветитьShred the potatoes longway instead of shortway and then make "tangles" as you drop them into the pot. Your latkes look super dense and it's because of all the panko and grating them shortway and mashing them into patties first.
ОтветитьI like a chunkier apple sauce. Just chuck the apples into the Instant Pot with cinnamon and lemon juice for five min and then mash them up with a potato masher. This is the way.

ОтветитьI made the apple sauce part of this recipe tonight, but used too much water. When I dumped the whole contents of the pot into the blender and hit high, the top flew off and sprayed the kitchen with what was supposed to be applesauce. However, since it was obviously never going to coagulate with all that water in it, we added rum and drank it hot. It was real good. I hadn't made the latkes yet, anyway.
ОтветитьI know this video is a year old, but I have to comment anyway. Made these with grilled brats, sauerkraut and a drizzle of horseradish cream and smear of stone ground mustard. My Oktoberfest this year is going to hit different. Thank you Papa.
Speaking of Oktoberfest, Josh, I would love it if you could please do some episodes in October on classic German food faves - schnitzel, sauerbraten, sauerkraut, rotkohl, spaetzle, German potato salad, brats and a good homemade roll for them, maybe a couple mustards, pretzels and beer cheese. Oh and especially….schweinshaxe!!!

ОтветитьNice recipe, however I would grate everything you mentioned through a food processor as faster and less painful. Then drain :) I would also add a bit of cornstarch which is more traditional and airfry.

I struggled a bit with forming the latkes. They ended up coming out amazing. But I had to be so careful working with them because they were still pretty wet and falling apart. I tried adding some more panko but to no avail. I didn't want to add too much more and risk screwing up the recipe.
Is it normal for them to fall apart and still be wet? Is the solution more panko? Or maybe chill before frying.
