Mascarpone containing dsserts works pretty damn fine with coffee though

Coffee and cheese MIGHT work with a very mild, very unassuming cheese, and a pretty dark roast. I think the roast should be borderline unpleasant. The cheese will really help reduce the bitterness. I wouldn't go for it myself, but if you were forced to pair coffee and cheese, that's what I'd do.

It's interesting because I don't like coffee (probably because I have only ever had bad name brand coffee) but I do like stilton and my biggest complaint of Wensleydale is that it's dry. You say Wet Wensleydale and I actually feel more enticed. I mean I trust that it's terrible because wensleydale is gonna wensleydale and there is a different between wet and creamy and I think that if iut was a moist texture like a soft goats cheese you'd have said.

I do genuinely think I might look to see if there are any good coffee cheeses because just like stilton the strength might work with the cheese

Bellavitano espresso cheese is one of my favorite cheeses. Great with a stout or porter.

In the north of France they're famous for eating Maroilles cheese with their coffee in the morning, most of the country think they're crazy but I tried it and I liked it, Maroilles is a pretty strong and fatty cheese (and stinky) and I like how it pairs with coffee.

i bought what i thought was wenslydale apricot, which is good. NO. THAT IS NOT WHAT IT WAS. damn whoever made "mimosa" flavor straight to hell. horrific. not edible. i struggled through some and my stomach was about as pissed as my tastebuds.

The only time I’ve tried coffee and cheese, was Parmesan dipped in honey an then lightly dipped in ground coffe. Was a famous chef idea. The contrast with salty, sweet and slightly bitterness of the coffe it actually works very well.

I love cheese, I love coffee. I can tolorate butterscotch chips. Vodka? Okay, come ON! Like chicken ripple ice cream, some great flavors shouldn't live together. I'll pass on that one, the name alone would turn me away. Well, sometimes new weird flavors become fads. NOT this one.
